If you’re in need of a side dish that’s nutritious but also appeals to the sweet tooth-ed, caramelised carrots, celery and honey is the answer! This delicious side has just enough sweetness, as well as some creamy saltiness thrown in, to make it extra-appetising but still healthy. Great for kids and adults!
Caramelised carrots, celery and honey
Ingredients
- 1kg carrots, halved lengthways
- juice of 1 lemon
- 80ml (¾ cup) olive/avocado oil
- 30ml (2 tbsp) ground cumin
- 100g pine nuts
- 125ml (½ cup) honey
- salt and freshly ground black pepper, to taste
- 100g feta, crumbled
- 3 celery leaves, to serve

Preheat the oven to 180°C.

Toss the carrots with the lemon juice, oil, cumin, nuts, honey and season.

Bake until the carrots are cooked and glossy.

Place the carrots on a serving dish, adjust the seasoning, sprinkle with the feta and celery leaves and serve.
