• Chicken Club Salad

    Looking for a way to spice up your chicken salad? Try this Chicken Club Salad recipe using chicken, prosciutto, avocado, tomatoes and parmesan. It’s quick and adds a healthy dose of protein!

    TOTAL TIME 15 minutes | SERVES 2-3

    INGREDIENTS

    500g chicken cutlets (thighs, deboned)
    Olive oil, to brush
    Salt & pepper, as needed
    1 Tbsp paprika
    100g Prosciutto
    1/4 baguette, thinly sliced on the diagonal
    1 avocado, peeled and cut into wedges or slices
    1/4 iceberg lettuce, cut into thin wedges
    1 very ripe tomato, sliced into thin rounds
    1/2 cup (125ml) balsamic reduction
    1 tsp Grated parmesan cheese

    METHOD

    IN a bowl, brush the chicken with oil the season with salt, pepper and paprika.

    IN a heated pan, add oil and sear chicken until it’s cooked and tender.

    IN a salad bowl, place tomato, avo slices, lettuce, prosciutto and chicken.

    TOP with parmesan cheese and then drizzle and dress with balsamic reduction

    SERVE chilled or immediately.
