Its wrap season and we’re coming in hot with a lekker chicken fajita wrap that’s sure to have your mouth watering. Enjoy this wrap with your favourite sip whilst enjoying the feel of the flavour.
Chicken fajitas wrap
Ingredients
- Chicken fajitas
- 800 grams boneless chicken thighs/breast, cut into long strips
- 1 tbsp lemon juice
- 2 tbsp prepared fajita seasoning
- 2 tbsp oil
- 1 cup mixed bell peppers, cut into long strips
- 1 red onion, thinly sliced
- 1 tbsp garlic powder
- Salt to taste
- Fajita Sauce
- 6 tbsp sour cream
- 2 tbsp mayonnaise
- 1-2 tsp prepared fajita seasoning
- 1 tbsp lemon juice
- 3 tbsp water
- To serve
- Tortillas, heated
- Grated cheddar cheese
Instructions
Fajita Seasoning
COMBINE all the ingredients together in a bowl and mix well until combined.
Chicken strips
COMBINE all the ingredients together in a bowl and mix well until combined.
COVER and refrigerate for at least 30 minutes or up to 2 hours.
HEAT extra oil in a large pan over a medium-high heat. Cook chicken for 5-6 minutes per side or until cooked through. Once cooked, transfer chicken to a plate and cover with foil to keep warm.
In the same pan, add more oil if needed.Add bell pepper, onion and garlic powder. Cook for 5 minutes or until tender. Season to taste.
Fajita Sauce
COMBINE all the ingredients together in a bowl and mix well until combined.
To serve
ADD chicken, vegetables, and a spoonful of creamy fajita sauce. Sprinkle it with cheese.
FOLD the bottom half of the tortilla up, then fold the sides and roll into a tight wrap. Place the wrapped fajita seam-side down on a warm pan.Cook for 1-2 minutes per side on low heat.
If you are taking it for lunch, wrap it in sandwich wrap or enjoy it as a delicious mid -week meal.
Foodie tip: this meal is super easy to prepare the morning or night before to allow it to marinate overnight.
