Citrus delicious pudding
Ingredients
- 90g butter, softened
- 330g (1,5 cups) castor sugar
- 375ml (1,5 cups) milk
- 3 large eggs
- 125ml (½ cup) lemon juice
- 75g (½ cup) cake flour
- 5ml (1 tsp) baking powder
- 5ml (1 tsp) orange rind, finely grated
- icing sugar, for dusting
Instructions

Preheat the oven to 180ºC.

Place the butter, sugar, milk, eggs, lemon juice, flour, baking powder and orange rind in the bowl of a food processor and process until smooth.

Pour into a lightly greased 1,25-litre-capacity ovenproof dish and bake until golden, about 1 hour.

Dust with icing sugar to serve.
