This sushi waffle is sure to become a sushi lover’s favourite! Crispy sushi rice, made in a waffle maker, topped with salmon, crunchy cucumber, Kewpie mayo, and creamy avocado.
Ingredients
- 400g salmon, skin removed and cut into small cubes
- 4 tbsp soy sauce
- 1/2 spring onion, finely chopped
- 4 cups cooked sushi rice
- 4 tbsp rice wine vinegar
- 2 tsp sesame oil
- 1-2 avocados, mashed
- Lemon juice, to taste
- 1 Mediterranean cucumber, sliced
- Kewpie mayo
- Sriracha sauce
- Toasted sesame seeds
Instructions
COMBINE salmon, soy sauce and spring onion in a bowl, and set aside
COMBINE your sushi rice, vinegar and sesame oil in a bowl and mix well.
HEAT a waffle maker and spray with non-stick cooking spray.
APPLY a thin layer of sushi rice and press it down gently. Cook for 6-8 min or until crispy. Do this until all your rice has been used.
COMBINE mashed avocado and lemon juice together and mix.
TOP your crispy rice waffle with a layer of mashed avocado, cucumber and salmon.
TOP with Kewpie mayo, sriracha sauce and toasted sesame seeds.
