Fried hake with an onion and bean pickle sauce
Ingredients
- 2 hake fillets
- salt and pepper, to taste
- 5ml (1 tsp) Cajun spice mix
- 60g (½ cup) flour
- 2 eggs, beaten
- cooking oil, for frying
- chips, rice, bread or salad, to serve

Season the fish with salt, pepper and Cajun spice. Dust with flour and dip in the beaten egg.

Heat the oil in a deep fryer to 170°C and fry the fish until golden brown, turning once, about 7 minutes.

Remove the fish from the oil and drain on paper towel. Serve with the pickle sauce and chips, rice, bread or salad.
SAUCE
20ml (4 tsp) cooking oil
5ml (1 tsp) hot curry powder
10ml (2 tsp) turmeric
5ml (1 tsp) coriander powder
2 onions, sliced
15ml (1 tbsp) chopped garlic
20ml (4 tsp) sugar
250ml (1 cup) spirit vinegar
salt and freshly ground black
pepper, to taste
200g baked beans
- Heat the oil in a saucepan, add the dry spices and fry for one minute.
- Add onions and garlic and sauté until the onions are soft, about 5 minutes.
- Add the sugar, vinegar, salt and pepper, and let the mixture reduce until the onions are cooked and the mixture is slightly thickened, about 10 minutes. 4 Finally, add the beans and cook for a further 5 minutes. Remove from heat, allow to cool and set aside.
