    Green melon and mint mojito

    Serves: 4
    Total Time: 20 mins

    Ingredients

    • 1 small honeydew melon
    • 125ml (½ cup) light rum
    • juice of 4 limes + slices, to garnish
    • 1 handful fresh mint leaves
    • 2 handfuls crushed ice
    • 1L (4 cups) soda water

    Instructions

    On a cutting board, halve the melon, then scoop out and discard the pips. Using a melon baller, scoop out balls of the flesh. Place in a bowl and set aside.

    Among 4 glasses, equally divide the rum, lime juice, mint leaves, crushed ice and soda water. Add the melon balls and lime slices to each glass and serve.
