The juicy sweetness of fresh green melon blends perfectly with the crispness of mint, creating a rejuvenating drink that’s perfect for any occasion. Serve over ice and garnish with mint sprigs and melon balls for a visually stunning presentation.

Green melon and mint mojito
Ingredients
- 1 small honeydew melon
- 125ml (½ cup) light rum
- juice of 4 limes + slices, to garnish
- 1 handful fresh mint leaves
- 2 handfuls crushed ice
- 1L (4 cups) soda water
Instructions
On a cutting board, halve the melon, then scoop out and discard the pips. Using a melon baller, scoop out balls of the flesh. Place in a bowl and set aside.
Among 4 glasses, equally divide the rum, lime juice, mint leaves, crushed ice and soda water. Add the melon balls and lime slices to each glass and serve.
