• Kick off the weekend with a hearty dish like our magnificent lamb curry. So delicious and comforting, you’ll want this dish on your dinner table every night of the week.

     

    Hearty Lamb curry

    Serves: 4-6
    Total Time: 1 hour + overnight marinade

    Ingredients

    • The lamb marinade
    • 1kg lamb pieces
    • 1 tbsp garlic paste
    • 1 tbsp ginger paste
    • 1 tsp salt
    • 1 red chili, chopped
    • 3 tbsp plain yoghurt
    • 2 tsp turmeric
    • 2 tsp chili powder
    • 2 tsp leaf masala
    • The curry
    • Vegetable oil
    • 1 tbsp Breyani seed mix
    • 1 onion, chopped
    • 2 tsp garlic ginger paste
    • 1 tsp leaf masala
    • ½ tsp turmeric
    • ½ tsp cumin powder
    • ½ tsp coriander powder
    • ½ tsp garam masala
    • 1 tbsp sugar
    • Boiling water
    • 3 Potatoes, peeled and chopped
    • cream/ coconut cream
    • Coriander salt
    • To serve
    • Yoghurt/ cream
    • Coriander, shopped
    • Roti

    Instructions

    Lamb marinade

    COMBINE all the ingredients together in a bowl and mix until the lamb is well coated. Cover and allow to marinate for 12 hours or overnight.

    The curry

    HEAT oil in a deep pan or pot over a medium heat. Add breyani mix and cook for 1 minute until seeds are slightly toasted.

    ADD onion and fry for 5 minutes until softened.

    ADD in the spices and cook for 1 minute until toasted . Add boiling water and stir to combine.

    ADD in your marinated lamb, stir and allow to cook, covered for 20 minutes.

    ADD in your potatoes and allow to cook for another 25 minutes. Season to taste.

    Notes

    Serve with a splash of cream or a spoonful of yoghurt.Top with chopped coriander and serve with roti or rice.
