Margarita fish
A quick and healthy fish dinner idea.
TOTAL TIME 15 minutes | SERVES 4
INGREDIENTS
- 1 lime
- 4 x 200 g firm white fish fillets
- 1 tsp dried chilli flakes
- 1 clove garlic, crushed
- 2 tbsp olive oil
- 500 g cherry truss tomatoes
- 2 tbsp tequila
- 2 tbsp olive oil, extra
- 1 tbsp caster sugar
- 450 g package microwave white long-grain rice
- 2 cups loosely packed fresh coriander leaves
METHOD
HEAT an oiled grill plate. Preheat grill.
CUT lime rind into thin strips; squeeze juice from lime. Combine rind, fish, chili, garlic and oil in a large bowl; season. Cook fish on grill plate about 3 minutes on each side or until cooked through.
MEANWHILE, grill tomatoes until just beginning to split.
COMBINE juice, tequila, extra oil and sugar in a medium bowl, season to taste.
MICROWAVE rice according to packet directions.
SERVE fish with rice; top with tomatoes, coriander and tequila mixture. Accompany with lime wedges if you like.
FOOD TEAM TIP: We used coral trout for this recipe but you can use any firm white fish fillet you like.
