For the chilli black olives, combine the ingredients and marinate for about 1 hour. For the sweet green olives, combine the ingredients and marinate for about 1 hour. For the roasted black olives, preheat the oven to 200°C. Combine the ingredients in a roasting tray and bake for 10 minutes, stirring once or twice. Serve the marinated olives with fresh bread.
