• Enjoy these pineapple skewers with a masala twist!  Inspired by Durban street food and paired with a delicious coconut sauce, each bite will transport you to a holiday paradise.

    Masala pineapple skewers with coconut dipping sauce

    Serves: 4-8
    Total Time: 15 min

    Ingredients

    • Coconut dipping sauce
    • 1 cup coconut yoghurt
    • 1-2 limes zested and juice
    • 1 tbsp honey
    • 1 tbsp freshly chopped mint
    • Pineapple and mango skewers
    • 1 tsp kashmiri chili powder
    • ⅔ cup white sugar
    • ¼ cup chilli powder
    • 1 tsp salt
    • 1-2 pineapples, peeled and cut into cubes or wedges
    • To serve,
    • Toasted coconut flakes, optional

    Instructions

    COMBINE all the ingredients together in a bowl and mix well.

    COMBINE all the spice,sugar and salt together in a bowl and mix well

    SKEWER you pineapple and mangos

    Sprinkle spice mixture over each skewer in the spice until generously covered on all sides.

    Notes

    Foodie Tips 1.) These go great on their own or with the dipping yoghurt. 2.) You can also skewer these with a combination of pineapple and mango for a fresh summer flavour.
