Penne with roasted tomato & smoked paprika sauce

SERVES 4 – 6
INGREDIENTS
2 onions, peeled and quartered
3 cloves garlic, peeled
750g assorted ripe tomatoes, quartered
1 bay leaf
3 sprigs oregano
30ml olive oil
Salt and freshly milled black pepper
75g Parmalat Butter with Smoked Paprika, sliced
500g penne, cooked and drained
125g streaky bacon, cooked and chopped (optional)/ salami
Pinch dried chili flakes
To Serve (optional)
Drizzle of pesto
Dried chilli flakes
Crispy bacon
Fresh herbs, chopped
Parmesan cheese
Milled black pepper
METHOD
- Preheat the oven to 200C.
- Place the onions, garlic, and tomatoes into a roasting pan. Add the bay leaf and oregano and drizzle with olive oil. Season with salt and pepper.
- Place the roasting tray in the oven and cook for 20 minutes. Turn the mixture in the tray, reduce the temperature to 180C, and cook for a further 20-25 minutes, or until the onions have softened.
- Remove from the oven, add the slices of Parmalat Butter with Smoked Paprika, and allow to cool for 10 minutes.
- Transfer the mixture, in batches, to a blender and blend until smooth, adding a little cold water to thin, if necessary.
- Pour through a sieve, for a silky-smooth texture, straight into a pot.
- Add the cooked pasta, bacon and heat through.
- Serve warm topped with any/all of the suggested extras.
