Pepper lebkuchen chocolate sandwiches are a traditional Christmas treat. These peppery soft biscuits work well with dark chocolate and are perfect for a sophisticated tea or served after dinner with coffee. They’re available at selected supermarkets, German delis and at Seemans (011-792-1410).
Pepper lebkuchen chocolate sandwiches
Ingredients
- 100g 70% dark chocolate
- 12 pepper lebkuchen biscuits
Instructions

Over a double boiler, melt the chocolate until runny. Set aside to cool slightly until thickened – it should be able to spread easily without running everywhere.

With a pallet knife or spoon, spread the chocolate onto one biscuit and sandwich with another. Place the chocolate sandwiches on a sheet of wax paper and leave to set for about 10 minutes.

Cook's tip: These can be kept in an airtight container for about five days.
