Pomegranate smoothie
Refreshing, sweet & healthy!
PREP TIME 10 minutes + freezing | SERVES 2
INGREDIENTS
- 2 pomegranates, seeds removed and set aside
- 1 cup Greek-style yoghurt
- 1 tbsp honey
- 1 large banana, chopped coarsely
METHOD
DIVIDE 2 tbsp of the pomegranate seeds among the holes of an ice-cube tray and top with water. Freeze for 4 hours or until frozen.
GRIND remaining pomegranate seeds using a mortar and pestle to release the juice. Strain through a sieve into a blender; discard solids.
ADD yoghurt, honey and chopped banana to the blender; blend until smooth.
POUR smoothie into glasses; top with pomegranate ice-cubes. Serve immediately.
FOOD TEAM TIP: You can use ⅔ cup pure pomegranate juice in the smoothie if pomegranates are out of season. For a thicker smoothie, freeze chopped banana for 4 hours or until firm before blending.
