• Pork sliders with mint slaw

    A tasty sweet and salty slider!

     

     PREP TIME 15 min | COOK TIME 45 min | SERVES 6 

     

    INGREDIENTS

    • 500 g frozen chips
    • 600 g ground pork mince
    • 2 spring onions, finely chopped
    • 2 tbsp finely chopped parsley
    • Vegetable oil for frying
    • 1 cup cheddar
    • 2 green apples, thinly sliced
    • 12 small burger buns, halved

     

    For the mint slaw

    • 1 cup shredded green cabbage
    • ¼ cup mint leaves
    • 1 spring onion, thinly sliced
    • ¼ cup mayonnaise
    • 1 tbsp dijon mustard

     

    METHOD


    PREHEAT oven to 220°C.

    ADD chips to a lined baking tray, season and bake according to packet instructions until golden.

    For the mint slaw

    ADD ingredients to a bowl, season well and toss to combine.

    For the burgers

    PLACE pork mince in a bowl, add onion and parsley and mix to combine. Divide into twelve 5cm patties.

    HEAT some oil in a pan over high heat. Fry half the patties for 3 minutes on each side, remove with a slotted spoon and drain on a paper towel. Repeat with remaining patties.

    REMOVE chips from the oven and switch to grill. Add patties to a baking tray and top with cheese. Grill for 2 minutes until melted.

    ADD apple slice and coleslaw to each roll, top with a burger patty and the second half of the roll.

    SERVE burgers with chips. 

     

    TOP TIP: Use larger rolls and double the size of the burgers to make 6 instead of 12.
