Heat a good slug of oil in a wok or large frying pan. Add the ginger and garlic and fry for 30 seconds. Add all the vegetables and stir-fry for 2 minutes before adding the noodles and prawns. Fry for 2 more minutes. Pour over the lime juice, oyster sauce and bean sprouts. Fry for a minute more to coat all the ingredients.
