A quick chicken salad is the perfect lunch to wrap up and take to the office. Healthy, easy, and deliciously filling.
Quick chicken salad
Ingredients
- 150ml olive oil
- 40ml balsamic vinegar
- Salt, to taste
- Black pepper, to taste
- 170 g blanched tenderstem broccoli
- 350 g blanched cauliflower florets
- 700 g baby potatoes, baked
- 1 kg chicken, roasted and sliced
- 240 g pan-fried Rosa tomatoes
- Bread, to serve

For the dressing, mix together 150ml olive oil, 40ml balsamic vinegar, and salt and freshly ground black pepper, to taste.

Combine 170g blanched tenderstem broccoli, 350g blanched cauliflower florets and 700g baked baby potatoes on a serving platter.

Top with 1kg ready-roasted and sliced chicken and 240g pan-fried Rosa tomatoes. Toss through the dressing and serve with hot crusty bread.
