During the month of love, it is our quest to impress the ones we hold dear to our hearts and nothing solidifies a bond stronger than cake and chocolate. These red velvet and dark chocolate cake pops are guaranteed to swoon anyone who gives it a try!
Red velvet & Dark chocolate and rum cake pops
Ingredients
- Red velvet cake pops
- Store Bought double layered red velvet cake, icing removed
- 1 cup cream cheese
- Dark chocolate and rum
- Store-bought double layered chocolate cake, Icing kept on
- ¼ cup rum or rum essence, to taste
- To assemble
- 2 bars of white chocolate
- Red Food colouring
Instructions
BREAK the cooled cake into a bowl, until it resembles rough breadcrumb like constancy.
ADD the cream cheese and stir until the mixture resembles wet sand and comes together.
LINE a baking tray with baking paper. Using an ice cream scoop or spoon, portion the cake mixture and roll into balls. Transfer the cake balls onto the baking tray. And freeze for up to 2-4 hours or until firm and solid.
Dark chocolate and rum
BREAK the cooled cake into a bowl, until it resembles rough breadcrumb like constancy.
ADD the rum and stir until the mixture resembles wet sand and comes together.
LINE a baking tray with baking paper. Using an ice cream scoop or spoon, portion the cake mixture and roll into balls. Transfer the cake balls onto the baking tray. And freeze for up to 2-4 hours or until firm and solid.
To assemble
TO COAT the cake pops, add food colouring of your choice to the melted white chocolate or keep it plain. Press a skewer or a fork into the cake balls and dip into the melted chocolate, making sure the cake ball is fully covered with chocolate. Run the skewer through a cooling rack with a baking tray underneath the baking tray and pull to leave the cake pop behind. Allow any excess chocolate to drip off
DECORATE as desired.
Notes
You can also freeze the cake pop balls with skewers inside when ready to dip and then remove them when ready to serve. This might make it easier for you to coat.
