Place the chipotle pepper in 250ml (1 cup) boiling water, 10 – 15 minutes or until soft. Chop the pepper finely. In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic, and cook, stirring occasionally until translucent, about 5 minutes. Stir in the mustard and paprika and cook, 30 seconds. Reduce the heat to medium-low and stir in the brown sugar, ketchup or tomato sauce, Worcestershire sauce, vinegar, molasses and the chopped chipotle. Season to taste. Cook, stirring occasionally until thickened, 5 – 10 minutes. Pour into sterilised jars, turn them upside down and allow to cool completely.Smoky chipotle BBQ sauce
