This sweet potato soup with kale chips recipe is seasonal, readily available and will be deliciously impressive on your dinner table.
INGREDIENTS
- 2 Tbsp. olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp. ground cumin
- Pinch chilli powder
- 600 grams orange sweet potatoes, peeled and chopped
- 400 grams potatoes, peeled and chopped
- 2 cups water
- 1½ cups vegetable stock
- ½ cup cream
- 1 Tbsp. lemon juice
- 2 25 gram packets kale chips
METHOD
HEAT half the oil in a pot over medium-high heat. Add onions and garlic and cook for 5 minutes, until soft. Add spices and cook for 1 minute, until fragrant. Add sweet potato, potato, water and stock and bring to the boil. Reduce the heat and simmer, covered, for 20 minutes until vegetables are tender. Cool soup for 10 minutes.
PLACE soup, in batches, in a blender or food processor and blend until smooth. Return to the same pot and add the cream and lemon juice. Reheat, stirring, without boiling, until hot. Season with salt and pepper.
SERVE bowls of soup topped with kale chips and drizzle with remaining oil.
