Looking a salad to whip up when you’re in a time crunch that doesn’t skimp on flavour? This three-bean salad only takes 15 minutes to make, and it tastes amazing too!
Three-bean salad
Ingredients
- 1 x 400g tin chickpeas, drained and rinsed
- 1 x 400g tin butterbeans, drained and rinsed
- 1 x 400g tin red kidney beans, drained and rinsed
- celery stalks, chopped
- 1 red onion, peeled and diced
- 2 tbsp sundried tomatoes, chopped
- 3 tbsp olive oil
- 1 tbsp red-wine vinegar
- small handful fresh coriander chopped + extra, to garnish
Instructions

Combine all the ingredients in a medium bowl. Mix until well combined.

Serve immediately, garnished with the extra coriander.
