Whole baked cauliflower
A delicious cauliflower recipe! This tasty take on cauliflower is mouth watering and can be a main or side dish.
PREP TIME 10 minutes | COOK TIME 35 minutes | SERVES 4-6

INGREDIENTS
- 1.3kg whole cauliflower
- 1 cup vegetable stock
- 60g butter, melted
- 1 tsp paprika
- 1 clove garlic, minced
- ¼ cup finely grated parmesan-style cheese
- 2 tbsp chopped parsley
METHOD
PREHEAT the oven to 200°C.
CUT a cross into the base of the cauliflower with a sharp knife. Place in a large, heavy-based casserole dish or roasting pan. Pour stock into the dish.
COMBINE melted butter, paprika, garlic and parmesan in a bowl; season. Brush all over the cauliflower.
COVER dish with a lid or foil and bake for 20 minutes. Remove lid; bake, uncovered, for a further 15 minutes or until cauliflower is tender and browned. Season and sprinkle with parsley to serve.

TIP: Try out this recipe with a head of broccoli, using the zest f 1 lemon instead of smoked paprika.
