She’s been a foodie all her life. Anyone who knows her well understands how much she enjoys good food. In high school, she was that girl who was always asked, “Stop eating in class.”
Her journey all started when she moved out from home. “I got bored with cooking my food the same way. I began attending one-day cooking classes, bought cookbooks, and one thing led to another,” she says.
She also really enjoys cooking for her friends and family. “Whenever I cooked, I was always asked to share the recipe. I started posting my meals on social media (@jobinthefoodie) and received a lot of positive and encouraging feedback,” she says. “The purpose of my page is to show people how possible it is to create home-cooked delicious meals,” she adds.
Jobin finds that there is something truly rewarding about seeing others delight in the food that she had prepared with love. “I mean, you can tell when love was one of the ingredients in a dish. Seeing others savor and enjoy the dishes I create brings a sense of fulfillment that fuels my passion for cooking even further,” she says.
Herby Chicken Meatballs with creamy linguine
Ingredients
- Meatballs
- 500g Chicken Mince
- 1 Onion, chopped
- 1 1/2 Garlic
- Handful Fresh Thyme
- Handful of Fresh Sage
- 1 tsp Parsley, dried
- 1 Egg
- Salt & Pepper (season the meatballs)
- 2 tbsp Olive Oil
- White sauce
- 2 tbsp Butter
- 1 tbsp Flour
- Milk (pour a little bit at a time until you get the consistency you like)
- 1 chicken stock pot
- 2 tbsp heavy cream
- Baby Pok Choi ( you can use spinach I used what I had in the fridge )
- Serving
- Cooked Pasta
- Parmesan cheese, for serving (optional)
Instructions
In a large bowl add chicken mince, onion, garlic, thyme, sage, parsley, corn flakes crumbs, egg, olive oil, salt & pepper.
Gently mix everything until combined don’t overwork your meat.
Shape into meatballs
In a skillet heat oil and fry the meatballs on all side in batches. Don’t overcrowd your pan
Set aside once cooked
For the sauce melt butter over low heat. Stir in the flour.
Gradually stir in milk consistently until you get the desired consistency this takes about 1-3 minutes.
Mix in chicken stock pod, followed by a sprig of thyme, few leaves of sage, parsley, heavy cream, baby pok choi & black pepper. Cook for about 1 min.
Once happy with the taste and consistency of the sauce. Add in your cooked pasta and cooked meatballs.
Sprinkle parmesan cheese when serving OR in the sauce.
